Today we are making homemade sauerkraut. We are fermenting the white cabbage in a small sauerkraut pot. But first the sauerkraut has to be grated. Then the sauerkraut is seasoned in the traditional way... Then the cabbage is layered in several layers in the cabbage pot... while doing this the white cabbage is mashed vigorously... so that the cabbage juice comes out! As soon as the cabbage pot is full to the top... the cabbage is weighed down with a weight or plate... and the cabbage pot is closed with the lid. The fermentation of sauerkraut usually takes 3 to 4 weeks... As soon as no more gas bubbles are bubbling out of the pot... the sauerkraut is completely fermented. Now it is nice and sour and long-lasting... Your garden neighbor wishes you lots of fun trying it out✌️ Ingredients: 2-3 whole white cabbage heads 10g salt (per kilogram of white cabbage!) 5-10 whole juniper berries (per kilogram of white cabbage!)
