Welcome to Living Gluten Free, how are you? In today's video we are going to make this INCREDIBLE gluten-free Coconut and Dulce de Leche cake that you won't believe how delicious it is. Here are the ingredients: ????250 g gluten-free flour mix ????150 g butter ????250 g sugar (one part for the dough and another for the topping) ????4 eggs (2 for the dough, 2 for the topping) ????1 tbsp vanilla esc ????1 tbsp baking powder ????1 pinch xanthan gum ????400 g confectioner's dulce de leche ????200 g grated coconut ???? Beat the butter with 100 g sugar, 2 eggs, and vanilla. Then add the gluten-free flour mix with the baking powder and xanthan gum. Move to the counter and make a smooth ball. Let it rest in the refrigerator covered with film and stretched. ???? Butter and flour a pie pan and cover it with the dough and place it back in the refrigerator for a while to prevent the dough from breaking when adding the dulce de leche. ???? Place the dulce de leche on the dough and then place the cover. ???? For the cover, mix 150 gr of sugar, coconut and two eggs. ???? Oven 180 degrees for approx. 30 minutes ???? Let it cool. ????
