Today they are mainly produced in Canada and India. But also regionally - the legumes thrive on the barren soils of Swabia. THIS IS WHY THE LEGUMES ARE SO HEALTHY Lentils contain a lot of vegetable protein, as well as magnesium, iron, potassium, vitamins A, B and E. Thanks to their high fiber content, they keep you full for a long time. MOUNTAIN LENTILS, PLATE LENTILS, BELUGA LENTILS: THE DIFFERENCES Mountain lentils are the classic lentils. The slightly larger ones are called plate lentils and are good for stews. The much smaller lentils are called Beluga lentils, which are very aromatic. Red lentils, yellow lentils or dark lentils - what's the difference? Unpeeled lentils are red or yellow, so much more colorful. However, the shell contains a lot of fiber, minerals and vitamins. COOKING LENTILS - TIPS Do you have to soak lentils for a long time? Not necessarily!
