Lemon marmalade is fragrant, gentle, with a slightly bitter aftertaste, a real treat. But I'm not talking about store-bought marmalade that almost seems like jelly, I'm talking about a rustic marmalade, with chunks, peels, a real delicacy to be savored on a slice of bread, and here's the super easy recipe to create this fantastic lemon marmalade. Ingredients for 2-3 jars Organic Lemons 1 Kg Sugar 400-500 g to taste ginger or vanilla Wash and clean the lemons well. Cut off the first and last centimeter and discard it Cut the lemon in half and then into slices of a couple of millimeters thick. Remove any seeds you find along the way. Place the whole lemon in a large pot. Taste a slice of lemon. If it is very bitter, cover all the lemons with water and leave them covered with the lid for 24 hours, and then proceed with the recipe. If they do not seem very bitter to you, cover them with water anyway and put them on the stove, bring them almost to the boil and then drain them. Put the lemons back in the pot, add 200 ml of water, 500 g of sugar and bring to the boil. When it boils, lower the heat and boil slowly for about 45 minutes or for however long it takes for the lemon jam to thicken. It should become thick like a classic jam but be careful not to overdo it otherwise it will caramelize. In the meantime you will have also boiled the jars, the lids, a funnel and a ladle to sterilize. Ready the jam you can pour it still boiling in the jars just drained from the boiling water and therefore sterilized. Fill them well, do not choose large jars, and close them well immediately. In the same water where you sterilized which will still be boiling you put the jars that will certainly be very hot and covered with boiling water. Bring to a slow boil and turn off and leave the jars until they are cold. You can also eat it immediately, it doesn't last long.
