Potato salad is a typical dish on the Brazilian table, but how about a RUSSIAN version? Paola Carosella teaches you the step by step of this delicious recipe! 😋 Ingredients: 4 medium potatoes cut into cubes 2 medium carrots cut into cubes 2 beets cut into cubes 1 cup of chopped celery 1 cup of peas 50ml of white wine vinegar 2 tablespoons of sugar ½ cup of pickles cut into slices 400 grams of mayonnaise Juice of 1 Sicilian lemon Dill to taste 1 handful of chopped parsley ¼ clove of minced garlic Olive oil to taste METHOD Cook the potato cubes starting with cold water and salt. In another pan, dissolve the white vinegar with ½ tablespoon of sugar. Set aside. When the potato is cooked, transfer to a bowl and season with the vinegar dissolved with sugar, 1 pinch of salt and 1 drizzle of olive oil. Set aside. Cook the carrots starting with hot water, a pinch of salt and 1 tablespoon of sugar. When the carrots are cooked, transfer them to a bowl to cool. Reserve the water from which the carrots were cooked. Do the same with the beets. Cook the peas in the same water that you cooked the carrots in, drain and throw them in a bowl with ice, water and salt to cool and maintain their color. Remove the peas from the ice water very quickly, just to give them a thermal shock. Do not discard the water from which the peas and carrots were cooked. In a bowl, place the mayonnaise, garlic, lemon juice and a little (1 to 2 tablespoons) of the water from which the carrots and peas were cooked. Mix with a whisk. Add the diced potatoes, peas, carrots, chopped celery, sliced pickles, black pepper to taste and finally the beets. Mix everything with a spatula. Place in the refrigerator to cool. When the salad is very cold, remove it from the refrigerator, transfer it to a serving dish, sprinkle plenty of chopped parsley and decorate with baby carrots, beetroot wedges, celery leaves, peas and dill to taste.
