The dish of Kho quet or Dried shrimp and pork belly braised with pepper, braised in a clay pot is a dish that brings back so many memories. The old Kho quet only had fish sauce, a little bit of rock sugar or powdered sugar, MSG, pepper, and chili. Sometimes there were a few green onions. My grandmother's dish was braised until the fish sauce turned into a brown salt that stuck to the sides of the pot. The pot back then was a copper pot for cooking rice in the shape of a gourd. And the whole family only had one clay pot with a little bit of fish sauce braised like that. The modern Kho quet dish is more luxurious with dried shrimp or fresh shrimp and pork belly. Then there are purple onions, garlic, green chili, red chili, yellow chili. Although luxurious, my grandmother's Kho quet pot is still a lasting memory every time I think about it.
