There are many recipes for pork bacon and lard, especially from Transylvania and Banat, where they have been traditionally prepared for many hundreds of years. In our family, in Arad, they are made with a mix of water and milk, just like in many Banat villages. Transylvania pork bacon is usually made with water. This time we used pork bacon from the Mangalița (Mangalica) breed because it is healthier, but pork bacon and lard from other breeds of pigs are just as tasty. For pork bacon, we do not use kaiser (pork breast with layers of meat) but only pure bacon, without rind. The method of preparing pork bacon with milk leads to some fabulous results: superbly browned pork bacon, with a steak flavor and white, fine and fragrant lard, perfect for both savory and sweet dishes (tender doughs, croissants, cookies, tarts, etc.).
