During the 100-day “campaign” between September and December, the Grafschafter Krautfabrik processes over 30,000 tons of sugar beet into 8,000 tons of cabbage. The film shows the path of the beets from delivery through washing, cooking containers, presses and evaporation plants to the bottling of the finished cabbage in small containers (household cups). We are now the only scientists in Germany to use the medium of film specifically for research and presentation. The approximately 260 film productions that have been made in recent decades are irreplaceable documents of lost knowledge from agriculture, crafts, industrial work and the diverse regional customs. Today we use the medium of film primarily to document current processes of change and to accompany people in the Rhineland in their life contexts. This results in films on intercultural phenomena and problems, on the changing world of work, on new forms of social coexistence and on dealing with rituals, customs and traditions.
