Cover with baking paper and marinate in the fridge for at least 5 hours (overnight is even better). Allow the meat to reach room temperature for 30 minutes before grilling and smoking. Remove the grill grates. Fill the smoking box with the dry chips, place it on the aroma rails and light it over direct, high heat (220-240 °C) with the lid closed for 6-8 minutes. Fill the aluminum tray or IKEA tray ( https://amzn.to/2PyE8wM ) with 0.5 water and place it on the aroma rails. Replace the grates and place the smoking box ( https://amzn.to/2CPVY6D ) on top. Prepare the grill for indirect, very low to low heat (125-135 °C). Place the marinated meat in the roasting basket and grill and smoke over indirect heat with the lid closed for 4-5 hours. During this time, add the watered chips. Prepare the beer-whiskey mop: APPROX. 125 ML for 1.8 - 2.2 KG GRILLED FOOD: 100 ml light beer, 25 ml whiskey, juice of 1 lemon, 1 tbsp honey After the first grilling time, the meat should have a nice crust and a reddish-brown color with a core temperature of 48-56 °C. Then grill the meat for a further 3-4 hours, brushing it with the mop again and again until it is used up. Take the meat off the grill and place it in the middle on a double layer of baking paper. Roll the roast up in the paper so that it is completely covered. Grill the meat (the core temperature should now be 78-86°) over indirect heat with the lid closed for a further 2-3 hours until the core temperature is 92-95 °C. Remove from the grill and let the wrapped meat rest for 1-2 hours, preferably in a cool box. Before serving, mix in portions with the BBQ sauce to taste.
