Preheat the oven to 180 °C (fan oven). Mix the flour, sugar and cocoa powder in a bowl. 2. Melt the dark chocolate in a water bath. Then add the melted chocolate, apple sauce, oil and plant-based milk to the dry ingredients, stir well and pour into a greased tin (20 x 25 cm). 3. Spread the chocolate drops evenly over the dough and bake in the oven for 25-30 minutes. 4. Mix the frosting together and chill for 30 minutes. Mix dry ingredients. 2. Sift flour, salt and baking powder into a bowl and set aside. 3. Beat butter and sugar. 4. Beat the butter and sugar in a food processor for 2-3 minutes until light and creamy. Add vanilla and egg and mix well. 5. Work in dry ingredients. 6. Gradually add the flour mixture to the butter mixture and process into a smooth dough. 7. Form the dough into a disc between two sheets of baking paper or on a baking mat and chill in the fridge for 30 minutes. 8. Preheat the oven to 170 °C (top/bottom heat). 9. Roll out the dough and use a 7-10 cm round cookie cutter to cut out half of the cookies. For the other half, use a 2-3 cm small cookie cutter to cut out a hole in the middle. 10. Place the cookies on a baking tray and bake for about 10 minutes. Allow to cool completely. 11. Spread the whole cookies with cookie spread and place the cut-out cookies on top to form a sandwich cookie. 12. Use melted chocolate to paint the antlers and eyes.
