Heat the oil, fry the chicken until cooked. Remove and set aside. Next fry the garlic, shallots, red chilies and chilies until wilted. Remove and let cool slightly/warm. Then put them in a blender/chopper and grind coarsely. Remove the excess oil from frying, just enough to stir fry. Add the ground ingredients and stir fry for a while because the onion and all the ground ingredients are cooked (already fried). Then add brown sugar to balance the spicy taste, oyster sauce, tomato sauce, chili sauce and fish sauce. Then stir fry for a while. Add the chicken and a little water. Stir and leave for a while until it looks coated with chicken. Turn off the heat.
