How to make Raclette cheese at home with homogenized and pasteurized cow's milk, a type of milk more easily accessible to me than the illegal raw milk sold in Canada. The recipe includes all the steps to make the cheese and refine it, including a few mistakes to avoid. The tasting of the cheese was done in a second video so as not to lengthen this one. Ingredients: 12 liters of whole milk 1/8 tsp. Mesophile culture* 1/16 tsp. Brevibacterium Linens 3/4 tsp. Chloride Calcium in 1/4 cup non-chlorinated water 1/2** tsp. Rennet in 1/4 cup non-chlorinated water Several liters of non-chlorinated water to rinse the curds Brine (I use a saturated concentration) *Use 30% to 50% less ferment for raw milk **Renet does not always have the same strength.
