Dumplings can be found in pretty much every country in the world, and for good reason. Everyone loves dumplings. So today we're making original northern Chinese Jiaozi with @sissichen from Eatinginberlin. Stuffed dumplings. You can find all the information in the following Instagram post: / cp0tkmfgzse My guest: / eatinginberlin But first, for the Jiaozi recipe: For approx. 22 dumplings Dough: 250 g flour 130 g water Salt Filling: 3-4 Chinese cabbage leaves 3 green onions 4 cloves of garlic 300 g minced beef 0.5 tsp salt 0.5 tsp white pepper 1 tbsp sesame oil Optional: 1 piece of finely grated ginger For the dumplings 4 tbsp water Instructions: Mix the flour with the water little by little. If you are no longer sure whether you need more water, it is best to just moisten your hands with it so that the dough does not become too wet. Knead the dough until it has a smooth surface. This can take between 5-10 minutes. It is best to cover the dough with a damp cloth and set it aside for an hour. In the meantime, we prepare our filling. To do this, we cut the Chinese cabbage into fine, long strips and add a little salt. We let it stand for a while so that it loses some of the water. For the filling, we also cut the garlic and spring onions into fine strips and mix both with our minced meat and the spices to form a mass. Now squeeze out the Chinese cabbage and mix it in as well. We now roll the dough into a long roll and cut off even pieces. These are then rolled out with a little flour and can then be folded as shown in the video. Then cook the filled dumplings by throwing them into boiling water. As soon as the water is boiling, cool the water down again with some fresh water and repeat the process once more. When the water boils a third time, you can take them out of the water.
