I bring you this delicious pistachio paste recipe. Although you can easily get them in pastry shops, I always say that the best option is to make it at home. The result is much tastier and creamier. You can use it to flavor buttercream, chantilly, chocolate ganache and preparations of all kinds! INGREDIENTS IN GRAMS 150 g of peeled pistachios 100 g of sugar 50 g of sunflower oil Green food coloring to taste INGREDIENTS IN CUPS 2 cups of peeled pistachios ½ cup of sugar ¼ cup of sunflower oil Green food coloring to taste PREPARATION 1. Start peeling the pistachios, for this put water to heat and when it boils turn off. 2. Place the pistachios inside for 20 minutes and then strain. (This will prevent our paste from turning a pale brown color later.) 3. Using a kitchen towel, remove the shell from the pistachios and place them on a baking tray with a silpat. 4. Bake in a 160° C oven for 20 minutes or until completely dry and set aside. 5. Make a caramel by placing sugar in a heavy-bottomed saucepan and heating without mixing, until the sugar melts completely and changes color. 6. When the sugar is completely dissolved, you can stir with a spatula to integrate well. 7. Add the pistachios to the caramel and stir, then pour the preparation onto a silpat until the mixture cools. 8. Break into small pieces by hand and process the pistachios with the caramel. Add half of the oil little by little until you obtain a smooth, homogeneous paste. 9. Finally, add the food coloring to give it more color. 10. Place the preparation in a bowl and mix to finish integrating and add the rest of the oil. 11. Mix until you obtain a silky, fine paste. 12. Store in an airtight jar for up to three months outside the refrigerator or inside. To use it, it should be at room temperature.
