Rita Lobo gives TIPS FOR MARINATING CHICKEN and leaving the meat soft, juicy and delicious. #NhacGNT #RitaLobo #CozinhaPrática ➡ CHICKEN STEAK WITH YOGURT AND CURRY MARINADE Ingredients: 4 chicken steaks (100 g each) 1 pot of natural yogurt ½ teaspoon of curry powder 1 pinch of cayenne pepper olive oil to taste Preparation: In a bowl, mix the yogurt well with the curry, cayenne pepper and ½ spoon of olive oil. Transfer to an airtight bag and add the chicken steaks. Mix the marinade and close the bag, trying to remove as much air as you can to make it flat. Place in the refrigerator to marinate for up to 30 minutes or keep in the freezer for up to 3 months. ➡ CHICKEN STEAK WITH ORANGE, HONEY AND GINGER MARINADE Ingredients: 2 chicken steaks (100 g each) broth of 1 orange 1 tablespoon of honey 2 teaspoons of grated ginger 2 cloves of garlic ½ teaspoon ) turmeric olive oil to taste salt to taste Preparation: Mash and peel the garlic cloves. In a bowl mix the orange broth, honey, grated ginger, turmeric, ½ tablespoon of olive oil and mix well. Transfer to an airtight bag, add the garlic cloves and chicken steaks. Mix the marinade and close the bag, trying to remove as much air as you can until it becomes flat. Place in the refrigerator to marinate for up to 30 minutes or keep in the freezer for up to 3 months. ➡ CHICKEN STEAK WITH TOMATO AND VODKA MARINADE Ingredients: 2 chicken steaks (100 g each) ½ small onion 1 clove of garlic ¼ cup (tea) vodka 2 tablespoons tomato paste broth of ½ lemon 1 pinch of dry pepperoni olive oil to taste Preparation: Peel and crush the garlic clove. Peel and pass the onion through the coarse part of the grater. In a bowl, mix the vodka with the tomato paste, lemon, onion, garlic, chilli pepper and 1 tablespoon of olive oil. Transfer the marinade to an airtight bag and add the chicken steaks. ➡ CHICKEN STEAK WITH YOGURT AND ZATAR MARINADE Ingredients: 4 chicken steaks (100 g each) 1 pot of natural yogurt (170 g) 1 ½ teaspoon of zatar zest of 1 lemon olive oil to taste Preparation: In a bowl, mix the yogurt, zatar, lemon zest and 1 tablespoon of olive oil. Transfer the marinade to an airtight bag and add the chicken steaks. ➡ CHICKEN STEAK WITH BASIL AND LEMON MARINADE Ingredients: 2 chicken steaks (100 g each) 6 sprigs of basil broth of ½ lemon 1 clove of garlic olive oil to taste Preparation: Using the side of the knife, mash and peel the garlic clove. Wash and transfer the basil leaves to the processor, add the garlic, lemon broth and 3 tablespoons of olive oil. Beat well to crush. Transfer the marinade to an airtight bag and add the chicken steaks. ➡ CHICKEN STEAK WITH SHOYU MARINADE Ingredients: 2 chicken steaks (100 g each) ¼ cup (tea) shoyu (soy sauce) 1 tablespoon (soup) rice vinegar 1 ½ tablespoon (soup) brown sugar 1 dedo-de-moça pepper sesame oil to taste olive oil to taste ½ teaspoon cornstarch Preparation: Wash, dry and cut the dedo-de-moça pepper in half. Discard the seeds and chop finely. In a bowl mix the soy sauce, rice vinegar, sugar, pepper and 3 drops of sesame oil. Mix well, transfer to an airtight bag and add the chicken steaks. Mix the marinade and close the bag, trying to remove as much air as possible and leave it flat. Place in the refrigerator to marinate for up to 30 minutes or keep in the freezer for up to 3 months. ➡ To use any frozen marinade above: The night before preparing, transfer the marinated steaks to the refrigerator and leave to defrost until ready to use. Place a medium frying pan over medium heat. When it heats up, drizzle with 2 teaspoons of olive oil. Using tongs, remove the steaks from the marinade, letting the liquid drain well and place them next to each other in the pan. Season with salt to taste and let it brown for 2 minutes on each side. Transfer to a plate and cover with a lid while you prepare the sauce. Turn off the heat on the frying pan, add the marinade and stir well with a wire whisk to dissolve the burns and incorporate the grilled flavor. Turn the heat back on and cook over low heat until it boils and forms a thick sauce.
