I made a video so that you can make nutritious rice cakes made with old pumpkins at home quickly and easily, and they are chewy and delicious. I hope our video will be helpful when you make nutritious rice cakes. ⑴ Recipe for old pumpkin nutritious rice cakes ① Soaking dried pumpkin in sugar Cup measurement standard One beer cup 250ml/g Dried old pumpkin (pumpkin) 300g Soaking frozen soybeans (250g) in water (500g) Soaking buckwheat soybeans (250g) in water (500g) 4 tablespoons sugar First, if you soak the dried pumpkin in sugar, it will act as a preservative for the rice cakes and prevent them from spoiling quickly. Soak the dried pumpkin in water for 20 minutes. Once the pumpkin is soaked, add sugar, press down, and soak for 10 minutes. Then, soak 2 cups (500g) of frozen soybeans and 2 cups (500g) of frozen soybeans that were soaked in water for 5 hours and lightly boiled, and put them in a court pan and add sugar. 4 tablespoons and a little coarse salt (sea salt) and stir-fry the beans as if they were being boiled. ② Prepare glutinous rice powder. Glutinous rice or glutinous rice powder (1.5 kg when not soaked). Soak glutinous rice in lukewarm water for 3-4 hours in advance. If you go to a rice cake shop or mill and ask them to grind it for you, they will add salt when they grind it for you. You can just steam it right away. If you use glutinous rice powder sold at the market, you will have to add water and add salt again. It will lose a lot of stickiness and the rice cake will become hard quickly. So I recommend that you grind a lot of glutinous rice at the rice cake shop. 🎤 When grinding glutinous rice powder yourself, add half a tablespoon of salt and a little sugar. This will prevent the glutinous rice cake from sticking. When making nutritious rice cake, place half of the roasted beans with little moisture, chestnuts, raisins, and jujubes on the bottom. Place the old pumpkin soaked in sugar and ground glutinous rice on top. Place the remaining half of the beans, jujubes, and raisins on top to finish. If you put the pumpkin and glutinous rice on top of the things with little moisture, the pumpkin nutritious rice cake will be moist and nice to look at. Now close the lid and steam the rice cake for about 25 minutes. ④ When the rice cake is fully cooked, take it out. After some time, open the lid and poke it with chopsticks. If white glutinous rice powder does not rise, it is cooked. In this state, let it steam for about 5 minutes. Since it is still hot, wear rubber gloves, take the rice cake out of the cotton cloth, and harden it in a suitable bowl or mold. ⑤ Finishing the old pumpkin nutrition rice cake. Divide the nutrition rice cake taken out of the cotton cloth into 4 parts and put it in a mold or bowl and let it cool. Since it is too sticky because of the glutinous rice, you can cool it and cut it. If there are any floaty parts in the rice cake, press it with a spoon to make it look nice.
