Hi everyone, I'm Matteo and in this video we discover together how to make Roman pizza at home with the Bimby, using the biga technique, that is, a pre-ferment made the day before. Biga recipe for two Roman pizzas: 420 g of flour 190 g of water 4.2 g of fresh brewer's yeast We insert all the ingredients into the Bimby and blend them quickly for about 30 seconds. We insert the resulting dough into a container and let it rest for about 18 / 20 hours. Once left to rest, combine the dam with the other ingredients by inserting them into the Bimby together with the Biga: 162 g water 14 g salt 5 g sugar 24 g oil 50 g flour We knead everything for 7 minutes, work it lightly and put it in a container to rest for about an hour and a half or two (the dough should double). We divide the dough in two and work the dough by folding it a couple of times. We leave to rest until it doubles in size for about 3-4 hours. The dough for our Roman pizza is ready.
