MEASUREMENTS IN GRAMS Croissant dough . 250 g all-purpose flour . 5 g salt . 10 g honey . 20 g butter . 10 g fresh yeast . 30 g sugar . 120 g water Dough . 130 g butter for puff pastry Syrup . 70 g sugar . 70 g water MEASUREMENTS IN CUPS Croissant dough . 2 cups all-purpose flour . ½ tsp salt . ½ tbsp honey . 1 ½ tbsp butter . 1 ½ tbsp fresh yeast . 2 ½ tbsp sugar . 8 tbsp water Dough . ½ cup and 2 tbsp butter for puff pastry Syrup . ⅓ cup sugar . ¼ cup water PREPARATION 1. Place the water, which should be cold, and the fresh yeast in the mixer bowl. Mix until combined. 2. Then, add the sugar, flour, honey, butter, and salt. Start by kneading with the hook at speed 1 for four minutes and then continue kneading at speed 2 for eight more minutes, to achieve a more elastic dough. 3. Place a little extra flour on the counter, make a ball and wrap it with cling film. Let it rest for 30 minutes at room temperature. 4. After this time, roll out a rectangle measuring 26 cm wide by 17 cm high. 5. Cover the dough with cling film again and put it in the freezer for 30 minutes. This will stop the yeast from fermenting. 6. Now it is time to prepare the butter, which must be cold. To do this, place cling film on the counter and the butter on top of it, cover and stretch it to form a rectangle measuring 13 cm wide by 17 cm high. 7. Remove the dough from the freezer, place the butter in the middle and wrap it with the dough towards the middle. 8. Roll out with the rolling pin until it is 4 mm thick and approximately 50 cm long. 9. Using a spray bottle and water, spray the dough. Fold the ends inwards and stretch to seal the seam. Then spray with a little more water and fold the dough in half again. 10. Using a knife, cut along one side to loosen the sheets and obtain a rectangular and even shape. 11. Roll out the dough again to about 50 cm long and keep it 4 mm thick. Here you can help yourself with a whisk to achieve uniform thickness. 12. Spray with water and fold the dough crossing the ends. Once ready, cut one side. 13. Cover with plastic wrap and refrigerate for a minimum of 45 minutes to 2 hours. If you prefer, you can leave it overnight. 14. Once the dough has rested, roll out the dough to 19 cm high by 50 cm wide. 15. Cut 3 cm strips and roll the dough without applying pressure to form rolls. 16. Place each one inside previously buttered rolls on a baking tray. With a silpat on the base and another on top next to another plate. 17. With the oven off, place the dough inside next to a bowl with hot water for 45 minutes or until the dough reaches the size of the mold. 18. Remove from the oven and preheat to 170 ºC / 338º F for 10 minutes with heat up and down and the convection oven on. 19. Cook for 25 to 30 minutes. 20. For the syrup, put the water and sugar in a saucepan and bring to the heat. Once it comes to the boil, cook for 3 more minutes and remove from the heat. 21. When the rolls are ready, remove from the oven, unmold and place the syrup on top. 22. Let cool, fill and decorate with the flavors you like best!
