Make spaetzle yourself? Isn't that a lot of work? We thought so, but it's not! The only thing you need is a spaetzle slicer. You can get them online for as little as six euros. Then all you need is flour, eggs and a good selection of cheese! You can find out how to proceed in the recipe... Ingredients (for 4-6 people): • 500 grams of flour • 5 eggs • approx. 400 ml of water • 1 piece of Emmental cheese, 1 piece of mountain cheese, 1 piece of Gouda (approx. 700 grams of cheese in total) • 4-6 large red onions • Olive oil • 2 teaspoons of sugar • Salt, pepper How to do it: First, prepare the onions - they will go on the cheese spaetzle at the end and round off the dish perfectly. Peel the onions and cut them into thin rings. Then fry them in the pan with oil and caramelize them with the sugar. When they are well done and shiny, simply put them to one side until they make their big appearance. Next step: Put a large pot with plenty of salted water on and bring to the boil. Then grate the cheese of your choice. Better too much than too little :-) Put the flour and eggs in a large bowl and mix with a wooden spoon or whisk. Gradually add the water until you have a smooth, beautiful dough. (In the video, Bea shows what the consistency should be). When the water is boiling, use the spaetzle grater. Simply place it on the pot, put some dough on top and spread the dough with the spatula. The spaetzle only need to be in the water for a very short time and can be taken out as soon as they float to the top. Skim them off with a ladle and place in a mold. Spread a layer of cheese on top. Then follow with the next batch of spaetzle and then the cheese again. Do this until you have used up all the dough. Finally, put another good portion of cheese on top. If you like, you can put the dish in the oven for another 10-15 minutes. This will give you a nice golden, crispy topping. Then spread the glazed sweet onions on the cheese and the most delicious cheese spaetzle is ready!
