The history of New Bavaria began in the late 19th century, when Franz Gershheimer, a native of the Kingdom of Bavaria, opened a brewery in the village of Grigorovka. The location was not chosen by chance. The meticulous German spent seventeen years looking for a location with the purest water. The staff initially numbered 66 people. The brewery introduced German beer production technology, and the best brewing specialists from Bavaria were responsible for the quality. A few years later, a railway station began operating, which, like the brewery, was named "New Bavaria". And when a park was laid out in New Bavaria, the place became very popular with the townspeople. Here you could listen to music and, of course, drink local beer. And Bavarian sausages were served as snacks with beer. The products of Kharkiv brewers were sold in the best shops and restaurants of the city. For example, in the 1880s, Osip Dorensky's beer shop was famous on Rymarska Street in the center of Kharkiv. It had the best beer from Kharkiv breweries, as well as from Moscow and St. Petersburg, and even from abroad. Among the snacks for beer were fresh fish balyk, boiled crayfish, salted pretzels, spicy cheese, and dried beans. A mug of beer in Dorensky's shop cost 5 kopecks. By the end of the 19th century, the brewery became the largest beer producer in the province, and in 1909 it brought in a profit of 583,164 rubles.
