How did I get here? My story began with a deep passion for nutrition and cooking from a young age. This passion led me to graduate in Nutrition and Dietetics at the University of Navarra and to specialize in Antiaging Nutrition at Tufts University. My career took a significant turn when I started collaborating with world-famous chefs such as Massimo Bottura, combining culinary art with the science of nutrition. I founded the Accademia Cucina Evolution to share my knowledge and help professionals specialize in culinary medicine. One of my most ambitious projects was the opening of Libra, the first Italian anti-aging restaurant in the world, where every dish is designed to be tasty, faithful to tradition and healthy. I have written several books to spread the principles of Cucina Evolution, and I continue to work to innovate and improve the relationship between food and our health.
