Cut the tomato into very thin slices and set them aside as well. The brioche buns are then toasted on the cutting surface, and the buns are kept warm. Finally, the scrambled eggs are made. Beat the eggs together and put them in a small pan together with the butter in small pieces. Heat it up quite slowly while constantly whisking until the consistency starts to thicken. Add creme fraiche and season with salt and pepper. Spread the toasted side of the buns with bacon mayo, spread the scrambled eggs on the two sub buns, place a large spoonful of the onion-chorizo ​​mixture on top. Then a slice of cheddar cheese, which can be melted easily with a gas burner. And finally, a few slices of tomato and a sprinkling of spring onions before finishing with the top bun.
