Good ham can be a real delicacy. Germans ate around 5 kilograms of ham per capita in 2019. Germany's most popular type of raw ham is Black Forest ham. It is characterized by intensely red meat and a dark rind. It gets its unique smoky aroma from traditional smoking over fir wood. Less smoky than its counterpart from the Black Forest, but no less aromatic, is Westphalian ham. Already extremely popular in Roman times, the tender and mild Westphalian bone-in ham still enjoys a high reputation today. The Westphalian specialty has been geographically protected since 2013. This means that the entire production process, from the delivery of the raw materials to the complete maturation of the ham, must take place in a geographically defined area. Likewise, 80 percent of the raw materials processed must come from Westphalia. What makes the ham so special, in addition to the high quality of the meat, is that the producers cure it by hand. Westphalian ham owes its slightly nutty taste to the long bone that remains in the meat until it is fully cured. Westphalian bone-in ham must be cured for at least 6 months. The German Nutrition Society (DGE) recommends consuming a maximum of 300 to 600 grams of meat and sausage products per week. Converted to a year, this equates to around 30 kilos. The average German currently eats around 60 kilos: almost twice as much! Since high consumption of meat products can have a negative impact on our health, the DGE advocates a diet that contains less meat, is more varied and focuses on plant-based foods. This means that we should only eat ham in moderation as a special treat. And: Cured ham should not be heated or grilled too much, as this can produce nitrosamines that are harmful to health. ????
