Hello, in this video we're making a fanned pork loin in the Cordon Bleu style. It's really tasty, quick and easy to make. See for yourself, Yours, Michael ----------------------------------------------------------------------------------------- Ingredients: 1.2 kg pork loin 1 heaped spoonful of mustard (it doesn't matter which one, I had medium-hot) 1 tbsp thyme 1 tbsp oregano 2 tbsp BBQ rub of your choice, I had the cherry mix from Sauerländer BBCREW 200g smoked cheese 200g smoked pork loin as many slices as you have cuts. 3-4 onions Optional: beer, juice, etc. 1 tsp oil Preparation: Score the pork loin as if you were going to slice it, just don't cut all the way through! Leave about 1cm. Mix the mustard, a little oil, the herbs and the rub into a spice paste and then brush this onto the meat and into the pockets. Cut the onions into 1 cm thick slices and spread them out in a baking dish, then place the pork loin on top and put it in the fridge for an hour, or better yet, two hours, to allow the marinade to soak in. Now place a slice of cheese and ham on top of each other, fold them in the middle and then place them in the meat pockets. Set the grill to around 160°C indirect heat, 170°C is also OK. Once the dish is on the grill, add a little more beer, juice, stock, etc. to the dish, just as much as the onions are thick but not touching the meat. Then leave the whole thing on the grill for around 2 - 2.5 hours until the core temperature reaches 65° - 70°C, depending on your preference.
