Transfer to a medium bowl, mix the paprika, coriander powder, salt and sugar and rub well into the chicken fillet. Cover with water, cover with a plate and let it hydrate for 20 minutes in the fridge. The heat must be low, otherwise the meat will burn on the outside and remain raw on the inside.
