Remove with the help of tongs, wait for it to cool, remove the foil and peel 2 cloves. In the blender, place the milk, peeled garlic, mustard, sugar and lemon juice and blend on low speed. Add the oil in a thin stream, whisking constantly, for 3 minutes, or until firm. Transfer to a small bowl, cover with plastic wrap and refrigerate for 30 minutes. Prepare the rustic sauce: place the tomatoes on the grill, on the high heat, with the seeds facing down and leave for 5 minutes. Turn the tomatoes over and leave for another 5 minutes. Remove from the grill, place in a bowl. Add the olive oil and AJI-SAL® and mash with a fork until you get a rustic sauce. Set aside. Make the burger: place the meat in a bowl and shape into 5 120 g burgers. Place on a high grill, sprinkle with half a teaspoon of AJI-SAL® and leave for 4 minutes, or until the meat is golden brown. Turn over, sprinkle with half a teaspoon of AJI-SAL® again, add the cheese and leave for another 4 minutes, or until the cheese melts. Meanwhile, place the bacon slices on the grill and leave for 10 minutes, or until the slices are golden brown. Assembly: Spread butter on the inside of the buns and grill on a medium grill for 1 minute, or until golden brown. Remove from the grill, spread with mayonnaise, add the burger, sauce and bacon. Close with the other part of the bun and serve immediately.
