We have prepared a beautiful Korean rice cake, Seolgi, that is perfect as a Chuseok gift. Using purple sweet potato powder, we created a five-layer gradation. It is a rice cake gift that is beautiful enough on its own. We lightly sweetened the fresh sweet potatoes and added them between the Seolgi to add texture and flavor. The rice flour is based on wet milled rice flour. Please adjust the amount of moisture depending on the condition of the rice flour. Ingredients ● Gradation Sulgi 1. Rice Flour 140g / Red Sweet Potato Powder 2T Water 3T / Sugar 20g 2. Rice Flour 140g / Red Sweet Potato Powder 1T Water 2 + ⅓T / Sugar 20g 3. Rice Flour 140g / Red Sweet Potato Powder 1t Water 2T / Sugar 20g 4. Rice Flour 140g / Red Sweet Potato Powder 1/3t Water 1 + ⅔ T / Sugar 20g 5. Rice Flour 140g Water 1 + ½T / Sugar 20g ● Sweet Potato Filling Sweet Potato 120g Water 180g Sugar 43g Ingredients ● Gradation Sulgi 1. Rice Flour 140g / Red Sweet potato Powder 2T Water 3T / Sugar 20g 2. Rice Flour 140g / Red Sweet potato Powder 1T Water 2 + ⅓T / Sugar 20g 3. Rice Flour 140g / Red Sweet potato Powder 1t Water 2T / Sugar 20g 4. Rice Flour 140g / Red Sweet potato Powder ⅓t Water 1 + ⅔ T / Sugar 20g 5. Rice Flour 140g Water 1 + ½T / Sugar 20g ● Sweet potato Filling Sweet potato 120g Water 180g Sugar 43g Instructions 1. Moisten the rice flour and purple sweet potato powder and sift twice. The gap between the sieves should be about 1mm. 2. Add the sugar and mix well quickly, then place in a mousse ring. 3. Use a handled spatula to smooth the surface and add 1/3 of the sweet potato filling. 4. The color may change depending on the amount of purple sweet potato powder, so reduce the amount in order and repeat the same process. 5. For the last top layer, make a layer using only rice flour, water, and sugar, excluding the sweet potato powder. 6. Use a long, flat tool to smooth the top. 7. Place in a boiling water pot and steam over high heat for 25 minutes, then turn off the heat and let sit for 5 minutes. 8. Take out the rice cake and finish by covering it with mousse.
