Christian works at full speed when everyone else is fast asleep. Up to 3,000 baked goods pass through his hands in one shift. Shift starts at 3 a.m. As a dough maker, the 27-year-old sets the pace in the bakery and has to keep an overview of the kneading machine, oven, pre-orders, different recipes and the dough consistency. Sounds like a lot of multitasking? It is. Since he began his baker apprenticeship there in 2012, Christian has worked in a country bakery with three branches in Swabia. As much as he appreciates the team spirit and environment, being a journeyman baker is not enough for him. He wants to achieve another professional goal by his 30th birthday. We met Christian at 2 a.m. and spent a shift in the bakery. He showed us how much manual work is still required before we can choose the different rolls and breads at the counter.
