There are also many Italian restaurants in Dubai always looking for qualified personnel: Italian cuisine is in fact seen as refined cuisine and therefore this is always a thriving place for those looking for work as a chef or restaurant manager. We then interviewed Domenico Stranieri, who arrived in Dubai in 2013 as a pizza chef and now owns his own pizzeria, taking over the one where he worked. Domenico is therefore the example of a person who has made his dream come true. We talked with Domenico both about his story and about the work of a pizza chef, which has some differences compared to Italy. While in fact the work of a pizza chef in Italy is mostly limited to managing the dough, the products and the counter, here in Dubai it more easily transforms into a role of pizza chef, with some managerial aspects: you must therefore know how to manage a minimum of a brigade (often international and with no experience with Italian cuisine), know how to manage the pantry while keeping the food cost not too high, interface with other staff (also non-Italian).
