Lukas Bucheli is taking his final apprenticeship exam at the age of 39. He gave up his lucrative management job at an international corporation in China to become a cheesemaker and start his own company. His plan: to do an apprenticeship as a dairy technologist, start a company, tinker, take out a loan, hire employees – and get out onto the market.
