It is a beautiful story that of the master ice cream makers of the Val di Zoldo and, more widely, of the province of Belluno. A story of professionalism and satisfaction, success and emigration, commitment and sacrifice. The Zoldo ice cream makers have brought their mastery to different parts of the world. And even today, especially in Germany, they are recognized as the true professionals of ice cream, an art that they began to export (out of necessity) towards the end of the 19th century, when the area could no longer guarantee a future of work. So they emigrated, managing over time to assert themselves thanks to a skill developed in the Belluno area. But the separation from their land was not at all painless, proof of which is that many of them, after retiring, returned to their native places and today continue to bear witness to a tradition that determined their salvation. In the gestures of the Zoldo ice cream makers there is all the intensity of an important, Venetian, hard history, studded with human trials that they had to face with humility and determination. It all started among the tabià, the old barns, beautiful buildings, rich in rural culture, which still stand there today to testify to the sense of a civilization deeply tied to their land, of which the ice cream makers are formidable interpreters.
