The Esterhazy roast beef is a fine roast beef. This dish was created sometime between 1750 and 1800 by the chefs of Prince Nikolaus Esterhazy - over the years, a number of variations have been created - here is mine. Recipe for 2 people 2 pieces of sirloin (entrecôte) or roast beef 1.5 tbsp clarified butter 1 tsp salt 1 tsp pepper 1 onion 100g bacon (breakfast bacon) 100g white wine (Welschriesling or Elbling) 300g beef broth (salted) 2 carrots, 1 yellow beet, and a parsley root 1 tbsp butter 1.5 tsp capers 0.5-1 tsp lemon zest 3 cloves of garlic 80g sour cream (sour cream) 1 tbsp flour 1 tbsp tarragon mustard or Dijon mustard 1 tsp sweet paprika powder
