In the Professor's Mansion in Gölbaşı, Ankara, my Sadık Ustam has been bringing Birecik eggplants from Şanlıurfa Birecik to the people of Ankara for 21 years and making balcan kebabs for his customers. The Birecik eggplant season, which starts in July every year, lasts for about 2 months and then ends. My Sadık Ustam is truly the nirvana of this business, he makes a kebab as delicious as it can be. He grinds the fatty lamb meat in armor and cooks the eggplants in the most correct way on the coals of an orange tree. After the kebab is cooked, it is left to steep for 10 minutes. Then it is served with isot and head onions that he brings from Birecik. It is truly a very delicious kebab. I definitely recommend it to its lovers before the season is over. A portion of balcan kebab in the Professor's Mansion is 880₺.
