Bismillah. Qadarullah, yesterday my little one was sick, suddenly had a fever. Since the day before my little one had requested to be made dimsum siomay. Go ahead.. make it yourself instead of buying it. The result is more, more economical and more satisfying. This 1 recipe can make 48 pieces. If you buy 1 piece it is around 4-5 thousand. Recommended for selling and stocking frozen food :) DIMSUM SIOMAY by @dapurumi INGREDIENTS Yield 48 pcs (dimsum skin used size d 8 cm) 500 grams of chicken thigh fillet + skins 100 grams of shrimp (weighed without heads) peeled, chopped Sufficient spring onions 2 egg whites 8 tablespoons tapioca flour 4 cloves of garlic 3/4 teaspoon salt 1/2 teaspoon mushroom stock 3 tablespoons oyster sauce 1 tablespoon soy sauce 1 tablespoon sesame oil 2 tablespoons granulated sugar 3/4 teaspoon pepper powder Sufficient dumpling/dimsum skin Cheese for topping (optional) DIPPING SAUCE 4 cloves of garlic 4 shallots 7 cayenne peppers 2 red chilies / curly chilies Sufficient oil for sauteing 300 ml water 1/2 tablespoon cornstarch + a little water 1 teaspoon mushroom stock 1 1/2 tablespoons granulated sugar 6 tablespoons tomato sauce 6 tablespoons chili sauce *if using dumpling skins, try to find the best ones specifically for boiling/steaming. Usually thinner and more flexible. Not the one for fried dumplings. Because fried dumplings are thicker and stiffer. The result can be harder and drier. *if you like it denser and chewier, chop the chicken until smooth, if you like it soft and chewy, chop the chicken coarser.
