Raspberry mousse 1.5 dl milk 2 Eggs 20 dkg frozen raspberries 15 dkg sugar 4 dl whipped cream 2 dkg egg starch 15 grams Kuko gelatin + 75 g cold water 1️⃣ Base: melt chocolate with butter. Beat the eggs with the sugar until foamy, then add the chocolate butter. Sift in the flour. Bake in the smaller form at 160° for 15 minutes. 2️⃣We melt the milk chocolate with the cream and pour it into a smaller mold lined with folpack, pressing 15-20 raspberries into it. Put it in the freezer for at least 1 hour. 3️⃣ Make jam from raspberries and two spoons of sugar. When the raspberries are fully cooked, turn them off and strain them through a filter with a small hole. Return the raspberry syrup obtained in this way to the pot and cook until creamy by adding the starch. Cool completely. 4️⃣ Heat the milk. Beat the eggs with the sugar into a light foam, then add the hot milk. Pour it all back into the pot, then make a pudding-like cream out of it. While it is still hot, pour in our raspberry cream. 5️⃣ Swell the gelatin with cold water. 6️⃣ Whip the cream, but it is important that it is not a hard foam, the texture should be reminiscent of melted ice cream. Carefully add it to the cooked base, then drizzle in the melted gelatin. We get a thin cream. 7️⃣ Pour one third of the Mousse into a larger mold lined with foil, put it in the freezer for 5 minutes. 8️⃣ Then place the raspberry chocolate layer on top - it's okay if it's not hard, try to smooth it out as much as possible.
