Recipe for dad's parade dish for 4 people Dough - recipe by Sandra Mastio • 1.5 g yeast • 400 g cold water • 500 g Tipo 00 flour • 125 g protein-rich flour • 25 g unrefined salt without iodine • 20 g olive oil Weigh all the ingredients. Mix the yeast into the water. Pour the flour and yeast into your mixer and process the dough on low speed for a few minutes until the dough looks smooth and has come together. Pour in the salt and let the dough work until the salt has gone in. Pour in the olive oil and let it work in at a low speed for about 2 minutes. Turn up the speed of your dough mixer to maximum and run the dough for 15 minutes. Then turn off and let the dough rest for 10-15 minutes. Transfer the dough to a plastic container with a lid, approved for food. Lift the dough at the "waist" and shape it into a smooth oval ball. Put the lid on and leave the dough at room temperature for 1 hour. Put the dough in the fridge. In the evening, the dough must be folded. Lift it at the waist and make a forward movement with the arms so that the ends of the dough are folded under. Form again into a smooth and firm, large ball. Repeat this morning and night for at least three days, but up to 10 is fine. The longer the better! On the same day that you are going to bake your pizza, you divide the dough into 11 equal parts, they should weigh about 260 grams each. Form even balls and place them sparsely, preferably in a box with a lid. Let them come to room temperature before you bake them. The balls can be frozen individually and thawed at room temperature.
