Ingredients: 350 g lukewarm water 20 g yeast 40 g beetroot syrup or honey 350 g wheat flour 550 150 g wheat flour 1050 60 g rye flour 25 g oil (sunflower or rapeseed) 10 g salt 1 tbsp light vinegar First, the yeast is dissolved in lukewarm water with the beetroot syrup. Then all the other ingredients are added. The dough is kneaded for around five minutes, or a minute or two longer if you like. Once the dough is kneaded, place it in a greased bowl that can be covered with a lid. After the dough has rested and risen for an hour, place it on a floured surface. All four sides are folded inwards once. Then the end is folded down and the dough is formed into a loaf of bread. This goes into a greased and floured cast iron pot. The dough is floured and cut several times. The pot is placed in the cold oven. This is then set to 240 degrees and the bread is baked for 55 minutes. After this time, the lid is removed. If you want the bread to be even darker, you can bake it without the lid for another five minutes. Then the bread is taken out of the pot and left to cool on a rack. Enjoy your meal!
