Wash, peel and cut the carrots, celery and onions into large pieces - preheat the oven to 160°C. Heat the roasting pan and peel the potatoes - roast the vegetables in the roasting pan, add tomato paste and sauté. Deglaze the roasted vegetables with red wine and fill with water. Put the duck in the roasting pan and roast in the oven for 60 - 90 minutes until golden brown. Put the marinated red cabbage in a pan and cook at a low heat for 60 - 90 minutes. Finely grate the potatoes, squeeze them well and add salt and pepper. Grate the onion into the potato mixture, add the egg yolks and nutmeg and mix everything well - cover and put in a cool place. Remove the spices from the red cabbage - turn the oven up to 200 °C and cook the duck for a further 10 minutes. Strain the sauce through a sieve and tie lightly if necessary.
