Water to boil For the potato: ???? 2 small potatoes ???? Provolone cheese ???? Dried oregano or Provencal herbs ???? Cumin ????‍???? Preparation: For the bacon: ???? Marinate the pork belly with salt, paprika, sugar and aromatic herbs for 2 and a half hours ???? Wash the bacon with water to remove the marinade ???? Boil the bacon in a pot with water, roughly chopped leek and carrot, pepper and bay leaf for 3 hours ???? Remove the bacon from the pot, drain and brown well in a pan with the skin facing down and a weight on top to ensure that the entire surface is browned well ???? Remove from the heat and bake for 45 minutes at 195ºC For the Hasselback potato: ???? Wash the potatoes well and cut them into slices without going all the way to the end ???? Place a slice of provolone between each slice ???? Add oil, oregano, cumin, salt and pepper to taste ???? Bake the potatoes at 195ºC for 45 minutes with the bacon
