For those who are not friends with yeast pastries, I want to share a simpler and very tasty recipe for cottage cheese stollen without yeast. Grind dried fruits to the size of dried cranberries, put them in one bowl and pour in the alcohol. Cover the bowl with dried fruits with cling film and leave for an hour, or ideally overnight. 2. Grate the zest of one orange on a fine grater. 3. Sift flour and baking powder into a large bowl in which you intend to knead the dough for the stollen. You can use a food processor, I used my hands))) Add softened butter (150 g), cottage cheese, sugar, zest and vanilla extract to the same bowl. Mix everything thoroughly, then add nuts and dried fruits. Mix everything thoroughly again. 4. Mold an oval from the dough almost the width of the baking sheet, roll it out with a rolling pin. Separate one third from one side and press down with a rolling pin to form a small depression. Fold the smaller part of the stollen onto the larger part in the shape of a book; this is the traditional shape of German stollen. It is convenient to form it directly on a baking sheet lined with baking paper. Or you can form it in a simpler way, as shown in the video. 5. Bake the stollen for 45 minutes at 180 degrees. Remove the finished stollen from the oven and, while it is still hot, grease it with the remaining melted butter (50 ml) and sprinkle generously with powdered sugar. P.S. You can store the stollen for a long time (up to a month) wrapped in parchment paper. They say that it becomes even tastier from this.
