Today we're testing corn-fed chicken on a rotisserie - a comparison with and without brine. What's better? What is a brine? A brine consists of water, juices, salt and sugar, herbs, etc. If you put various meats in such a brine, osmosis and permeation take place. The meat absorbs the brine, and the salt and sugar, herbs, etc. penetrate the meat and gently season it. This makes it juicy and tender. But see for yourself..... Yours, Michael Ingredients: 2 corn-fed chickens, approx. 1.5 KG For the brine: 4 oranges 1 lime 500 ml cloudy apple juice 200 ml beer 2 onions 2 spring onions 3 cloves of garlic 2 chili peppers 2 tbsp fresh oregano 1 tbsp fresh thyme 3 tbsp salt 2 tbsp pepper 2 tbsp soy sauce 1 tsp cinnamon 1 tbsp honey 3 tbsp brown sugar 8-10 slices of ginger Water, to top up Chicken seasoning: 6 tsp salt 2 tsp pepper 2 tsp paprika powder 1 tsp curry powder ½ tsp onion granules is enough for 1 chicken. Preparation: Squeeze the juice out of the oranges. Cut the lime into slices. Roughly chop the rest that can be cut and put all the ingredients in a pan. Add the liquids, roughly press the lime slices and add them too. Mix everything well. Then add the chicken and put some of the ingredients into the chicken. Now we fill the whole thing with enough water to cover the rooster. And leave it in there for 24 hours. In the fridge, of course. After 24 hours we take the chicken out of the brine, remove any herbs etc. and pat it dry. Please be very careful when doing this, otherwise you won't get a proper crust. Now we'll dust the outside again with chicken spice and then put the whole thing on the rotisserie until it reaches an internal temperature of 80 degrees.
