While everything seems to increase, and while families have less and less money left in their pockets, a question becomes more relevant than ever: what are the profit margins of large-scale distribution? To find out, the prices of meat, fish and vegetables on sale at Coop and Migros were carefully recorded from March to the end of August. During the same months, thanks to anonymous sources, the prices that Coop and Migros paid to their suppliers: farmers, breeders, fishermen were also noted. Result: many variations in margins, many questions and, above all, gross margins that were sometimes really high. But how can we explain them then?
