Hélène Cochet, a marine biologist, has been working on the flat oyster, Ostrea edulis, for 20 years. It is the fight of her life. The flat oyster is the only original French oyster, but almost no one knows about it anymore: in a generation it has been forgotten. Replaced during the last century by the cupped oyster, an oyster of Asian origin, it is now threatened with extinction. Quiberon Bay, also known as the cradle of the flat oyster, is the last supply area for flat oyster spat in France. Hélène is now working there in conjunction with oyster farmers and Ifremer to try to ensure the renewal of this species. The threats weighing on it are indeed numerous: epizootic disease, water quality, climate change, predators including the gilthead sea bream which, when it arrives in a school, is capable of decimating a concession in a few hours.
