The club sandwich dates back to the late 19th century in New York. And there is a reason why it has become a classic that can be found all over the world. (Recipe below) Club sandwich for 4 people 12 large pieces of light toasted bread 1 turkey breast (or chicken breast) 4 eggs 2 tablespoons mayonnaise Romaine lettuce 2-3 tomatoes 1 cucumber 12-16 slices of bacon Season the turkey breast with salt and pepper and brown it on a pan in a little olive oil. Place the breast in the oven at 200 degrees for approx. 30 minutes depending on size. Allow the breast to cool completely. Toast the bacon slices in a pan until crispy. Let them drain on kitchen paper. Boil the eggs for 10-12 minutes. Cool them in cold water and peel them. Chop the eggs, mix them with mayonnaise and season them with salt and pepper. Shred the salad finely, cut the tomatoes into thin slices, cut the cucumber into thin slices - possibly lengthwise. Make Thousand island dressing: 2 dl mayonnaise 1 tbsp sour cream 1 tbsp tomato paste 2-3 tsp. English sauce A sprinkle of paprika A few splashes of tabasco A small splash of cognac A pinch of sugar Salt and freshly ground pepper All the ingredients are stirred together and the dressing is tasted. Lightly toast the toast on both sides. Spread the bottom slice with thousand island dressing. Cover it with shredded lettuce, then cucumber and then thin slices of turkey breast. Spread another slice of toast with dressing and place it with the buttered side down on the sandwich. Then put a layer of egg salad on top of the bread, and then slices of toasted bacon. Then thin slices of tomato and finally a final slice of toast smeared with dressing on the underside. Cut any peel off the crusts and divide the sandwich diagonally. It's easiest if you just stick a few wooden skewers through, which hold the whole thing together. Server possibly with some crispy potato chips.
