Defrost 150 to 200g of frozen peas, for the salad and the mayonnaise 2-4 pre-cooked potatoes (with skin) 150-200 ml of coconut milk Dash of olive oil A dash of apple cider vinegar A fresh clove of garlic A little rock salt Freshly ground pepper Defrost frozen peas in a bowl for the salad and the mayonnaise. Cook the wholemeal spelt noodles until al dente. Cut the corn kernels fresh from the cob or (depending on the season) take them out of the jar, drain and rinse. Put the pre-cooked potatoes, coconut milk, salt, pepper, clove of garlic and 1-2 tablespoons of the peas into the small food processor. Blend and add a little water if desired. Fold the corn and peas into the noodles and add the new light vegan mayonnaise and fold in.
