Ingredients: 500 g flour 0, 10 g brewer's yeast (or 150 g sourdough), 40 g cocoa, 60 g sugar, 330 ml milk, 10 g salt, 60 g butter, 200 g chocolate chips Method: In a bowl, or in a planetary mixer, place the flour 0, the cocoa, most of the milk and the crumbled brewer's yeast. Mix with a spoon for about 5 minutes, add the sugar and mix quickly. Add the salt and the remaining milk and work until you get a smooth dough. Add the soft butter in pieces and work until the dough absorbs the fat. Finally, add the chocolate chips and, after kneading, cover and let rise at room temperature until doubled in size. Make 100-120 g balls from the risen dough, fold them over and make them smooth. Place them on a baking tray with baking paper, spaced apart, cover with cling film and let rise again until doubled in size. Bake in a hot, static oven at 240° for 15 minutes.
