This variation requires the chicken to be breaded and fried and layered together with the tomato sauce and mozzarella. It is not a very complex recipe but it allows us to show some basic steps, starting with the tomato sauce. Mauro and Mattia will start with raw tomatoes that will first be blanched, peeled and then cooked in a pan with oil, onion and garlic. Once cooked, the sauce will be blended. Even the breadcrumbs, which were the protagonist in their previous recipe, are obtained from slices of bread toasted in a pan and then blended. At this point Mauro and Mattia bread the chicken slices, passing them first in flour, then in egg and finally in a mix of breadcrumbs and panko. After frying the chicken, the Improtas are ready to layer the parmigiana, with the sauce, mozzarella and caciocavallo.
