INGREDIENTS 1kg red onions; 45ml olive oil; 60ml balsamic vinegar; 50g brown sugar; Salt and pepper to taste. METHOD 1. Halve each onion lengthwise and remove the outer layer. Cut them into half rings and transfer them to a bowl. 2. Pour the olive oil into a low-bottomed pan and heat over medium heat. Add the onions and reduce the heat. 3. Cook the onions, covered, for about 20 minutes, stirring often to prevent them from burning. 4. Season with salt, pepper and brown sugar. Stir, cover and cook for another 20 minutes. 5. Pour in the balsamic vinegar and cook for another 20 minutes. 6. When the onions are soft and caramelised they are ready. 7.
