INGREDIENTS IN GRAMS 200 g egg white 400 g sugar 680 g butter Light blue and white food coloring as needed 4 g colorless vanilla essence INGREDIENTS IN CUPS 1 cup egg white 2 cups sugar 3 ½ cups butter Light blue and white food coloring as needed 1 tsp colorless vanilla essence PREPARATION 1. Completely dissolve the sugar in the egg whites, to do this put the 2 ingredients in a bain-marie over a bowl, it is important that the water in the pot never directly touches the bowl. 2. Check that the water does not boil, the steam from the hot water will be enough to dissolve the sugar crystals. 3. Bring the mixture to a temperature of about 60°C (use a thermometer to check the temperature of the mixture; you should not feel the crystals by touch). 4. Stir throughout the process so that the egg whites do not cook. 5. After approximately 10 minutes the sugar crystals will stop making noise, this is a sign that the sugar has completely dissolved and the mixture is ready to be whipped. 6. Remove the bowl from the bath and continue stirring for a few minutes to cool the mixture. 7. Transfer the mixture to the mixer and beat for 5 minutes at low speed and then another 5 minutes at high speed. 8. The meringue will be ready when the egg whites are well whipped and form firm peaks. 9. Add the butter at room temperature in small cubes. It is important that the meringue is completely cold so that it does not melt the butter. 10. When we have added approximately half the butter, change the whisk for the whisk or paddle. 11. After adding the butter, stir until everything is well integrated. You will notice that the mixture usually goes down and takes on a lumpy texture. This is normal.
