I'm Matteo Ferroni and in this video I would like to show you the recipe for Gabriele Bonci's spelt pizza versus my version. Ingredients for Bonci's spelt pizza version: 500 g of buratto spelt 500 g of wholemeal spelt flour 800 g of water 40 g of extra virgin olive oil 20 g of salt 150 g of natural yeast Once all the ingredients have been mixed together, let it rest for about 30 minutes and work the dough another 3 times, always with a rest of about 30 minutes between each step. Let it rest for about 20 hours. I also work my version with the ingredients you find at about minute 3:20 of the video. Let the dough rest for about 20 hours. After 20 hours, we work both doughs again. We divide Bonci's dough in two and let it rest for another 4 hours. We work my version with the rest of the ingredients that we didn't add the day before and let it rest for about an hour at room temperature, after which we divide it into two loaves that we leave to rest in the fridge.
